Garlic-Parmesan Topped Tilapia

  • Ingredients:
  • 4 tilapia fillets (about 1-1/4 lbs)
  • 1 to 1-1/4 cups fresh breadcrumbs
  • 3 cloves garlic, finely chopped
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • 1/2 cup grated parmesan cheese
  • 4 lemon wedges

Preheat the oven to 400°F. Coat a shallow baking pan with nonstick spray and arrange the fish fillets in a single layer.

In a small bowl, combine the breadcrumbs, garlic, 1 tablespoon of the olive oil, salt, pepper and parmesan cheese.

Brush the fish fillets with the remaining tablespoon of olive oil, top evenly with the crumb mixture, patting gently with the back of a spoon to be sure it adheres well.

Bake until the crumbs are golden brown and the fish flakes easily, 8 to 12 minutes. Garnish with lemon wedges and serve immediately.

Roasted Tomato Slices

Wash and remove the cores from 4 medium-sized tomatoes. Slice each tomato into 1/2-inch thick slices and arrange in a single layer on a parchment-lined baking sheet. Season liberally with salt and pepper, then drizzle with a bit of olive oil and balsamic vinegar.

Roast at 400°F for about 15 to 18 minutes, or until the slices appear soft and the skin is slightly wrinkled.
