Crispy Flattened Truffled Potatoes

This potato recipe is super-simple, but the end product is absolutely outstanding. We chose small, gold potatoes (1 to 1-1/2-inches) that have a fabulous buttery flavor all on their own, steamed them and flattened them. Then we brushed them with a combination of melted butter and white truffle oil, seasoned them with black truffle salt and roasted them at high heat. They're a must-try for all potato lovers!

Crispy Flattened Truffled Potatoes

  • Ingredients:
  • 1-1/2 lbs baby gold (or red) potatoes
  • 2 tablespoons unsalted butter, melted
  • 1-1/2 tablespoons white truffle oil
  • Black truffle salt
  • Freshly ground black pepper

Preheat the oven to 425°F and line a baking sheet with parchment.

Place the potatoes in a pot fitted with a steaming rack and add water. Cover and steam over high heat until the potatoes are tender when pierced with a knife, 10 to 15 minutes.

One by one, place the potatoes on a cutting board and gently flatten them to a thickness of about 3/8-inch with the back of a spatula. Carefully transfer them to the prepared baking sheet in a single layer. They will be rather fragile.

In a small bowl, combine the melted butter and truffle oil. Reserving half of the butter mixture for the second side of the potatoes, brush each potato generously, then season with the truffle salt and a few grinds of black pepper.

Place in the oven and roast until the potatoes turn golden brown, 10 to 12 minutes. Remove from the oven and flip each potato over. Brush with the remaining butter mixture, and season again with truffle salt and pepper. Return to the oven until the second side is golden brown, 10 to 12 minutes longer. Transfer to a plate and serve immediately.

Recipe Notes:
Truffle oil and truffle salt are wonderful ingredients to have on hand. They're a little bit pricey, so we certainly don't use them daily, but the flavor is so terrific we find an occasional splurge to be well worth the extra cost.
