Reuben Turkey Burgers
These juicy turkey burgers are topped with the classic elements of a Reuben sandwich. A quick homemade sauerkraut and Russian dressing are tasty additions to the zesty Swiss cheese-topped burgers. Oven-fried potatoes and sliced tomatoes round out an easy, satisfying dinner.
- For the burgers:
- 1 lb ground turkey
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon prepared horseradish
- 2 tablespoons soft breadcrumbs
- 1 tablespoon mayonnaise
- 4 thick slices Swiss cheese
- 4 hamburger rolls, toasted (see notes)
- For the "Quick Sauerkraut":
- 1/2 small head cabbage, finely shredded (about 6 cups)
- 1 tablespoon butter
- 2 tablespoons sugar
- Kosher salt and freshly ground black pepper
- 1/4 cup apple cider vinegar
- For the Russian dressing:
- 2 tablespoons mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon apple cider vinegar
- 2 tablespoons vegetable oil
- 1-1/2 tablespoons prepared horseradish
- 2 tablespoons sweet onion, very finely chopped
- Salt and freshly ground black pepper
Preparation:
Preheat a grill or broiler.
Place the turkey, salt, pepper, horseradish, breadcrumbs and mayonnaise in a large bowl. Combine thoroughly using your hands and form into 4 uniformly sized patties. Refrigerate until ready to cook.
Melt the butter in a large skillet over medium heat. Add the cabbage and sauté until wilted and soft, 3 to 4 minutes. Add the sugar, season with salt and pepper, then add the vinegar. Combine thoroughly and continue cooking until the vinegar has evaporated and the cabbage is tender. Transfer to a serving dish and set aside.
In a small bowl, combine the mayonnaise, ketchup, apple cider vinegar, horseradish and onion. Set aside.
Grill or broil the turkey burgers until no longer pink in the center, 3 to 4 minutes per side, placing a slice of Swiss cheese on top of each burger during the last minute of cooking.
To serve, place a turkey burger on each roll, top with "sauerkraut" and Russian dressing to taste.
Makes 4 servings
Recipe Notes:
We used thin-sliced deli flats for our burgers (100 calories each), but conventional hamburger rolls or seedless rye bread are good choices as well.
