Buffalo Sliders with Avocado Yogurt Sauce
If you're looking for a tasty alternative to your usual weeknight burger, try these dainty and delicious buffalo sliders on for size. Buffalo is a lean alternative to beef, and the tangy avocado yogurt sauce is a delightfully cool contrast. The slight sweetness of the Hawaiian rolls ties the flavors together well, though other small sandwich rolls could be used in their place.
- Ingredients:
- 1 lb ground buffalo
- 3 scallions, diced
- 3 cloves garlic, minced
- 1/4 cup panko
- 1 egg, beaten
- 1 teaspoon kosher salt
- A few grinds of fresh black pepper
- 8 Hawaiian rolls, split
- For the sauce:
- 3/4 cup Greek yogurt
- 1/4 cup extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 clove garlic, minced
- 1 teaspoon kosher salt
- 1/2 to 3/4 cup avocado, pureed (1 medium)
- 1/2 medium cucumber, seeded and chopped coarsely
Preparation:
Combine the ground buffalo, scallions, garlic, panko, beaten egg, salt and pepper in a bowl. Mix thoroughly until combined. Form into small patties that will fit on your rolls, about 2" in diameter and 3/4" thick.
In the meantime, combine all sauce ingredients in a food processor and puree until smooth. Set the yogurt sauce aside.
Spray a grill pan with non-stick spray and place over medium-high heat. Cook patties for about 3 minutes per side, or until they reach your desired doneness.
Place each buffalo patty on the split Hawaiian roll and top with a dollop of the Avocado Yogurt Sauce.
Makes 8 sliders
Recipe Notes:
Try using your leftover Avocado Yogurt Sauce as a dip for chips or spread it on a turkey sandwich or wrap in place of mayonnaise.
