Apple Cider And Chive Vinaigrette
Fresh apples, apple cider, cider vinegar and fresh chives make a sweet and tangy vinaigrette for fresh field greens. The light acidity of this salad is a nice prelude to hearty main courses with bold flavors.
- Ingredients:
- 1 Granny Smith apple, grated
- 2 tablespoons water
- 2 tablespoons apple cider
- 2 tablespoons apple cider vinegar
- 1 teaspoon sugar
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh chives, chopped
- 6 tablespoons oil
- Salt and pepper
Preparation:
Combine the grated apple, water, apple cider, vinegar and sugar in a small saucepan and simmer over low heat until reduced to about 1/4 cup. Whisk in the mustard, chives and the oil and season to taste with salt and pepper.
Recipe Notes:
We served this dressing over field greens tossed with toasted walnuts, grape tomatoes and cider-plumped dried cranberries. Although we enjoyed the salad just as it was, we thought a little bit of crumbled goat cheese would make a great addition next time around.
