Garlic Crumb Topped Chicken

Topped with thinly sliced fresh tomato and smothered in a toasty combination of garlic bread crumbs, mozzarella and parmesan cheese, these boneless chicken breasts turn out deliciously moist and tender. Serve with sautéed spinach and a green salad for a light, easy meal.

Garlic Crumb Topped Chicken

  • Ingredients:
  • 4 boneless, skinless chicken breast halves (tenderloins removed)
  • 1/4 cup flour
  • Salt and freshly ground black pepper
  • 3 tablespoons olive oil, divided
  • 1 tablespoon butter
  • 3 cloves garlic, very finely chopped
  • 1/2 cup dry breadcrumbs
  • 1/2 cup low-sodium chicken broth
  • 2 to 3 medium plum tomatoes, thinly sliced
  • 1/2 cup mozzarella cheese, finely shredded
  • 2 tablespoons freshly grated parmesan cheese

Preparation:
Preheat the oven to 375°F and coat a baking dish with nonstick spray (see notes).

Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness of about 5/8-inch. Season both sides with salt and pepper and set aside.

Heat 2 tablespoons of the olive oil along with the butter in a large skillet over medium heat. Add the garlic and sauté until fragrant and barely golden, 2 minutes (do not brown). Add the breadcrumbs and toss quickly to combine with the garlic-oil mixture. Remove from the heat and set aside to cool.

Lightly dredge the chicken pieces in flour, shaking off the excess.

Heat the remaining tablespoon of olive oil in a small pan and add the chicken in a single layer. Cook until light golden in color, 2 minutes per side. Add the chicken broth and continue cooking, turning the chicken several times, until the broth has reduced and thickened slightly, 1 to 2 minutes longer.

Transfer the chicken breasts to the prepared baking dish and drizzle the pan juices over them. Cover completely with a layer of tomato slices and season lightly with salt and pepper.

Add the mozzarella and parmesan cheeses to the cooled garlic crumbs and toss to combine. Spread the mixture evenly over the chicken and bake, uncovered for 10 to 12 minutes, or until the mozzarella is melted and the crumbs are nicely toasted.

Plate individual servings, spooning any extra crumbs on top and serve with sautéed fresh spinach.

Try to use a baking dish that fits the chicken snugly when arranged in a single layer. This will ensure that chicken stays moist and juicy.
